and I'm gonna take you through15 easy chicken dinners
that are also super delicious.
First is Instant Pot chicken cassoulet.
Look at this dish.
It is mouthwatering tender chicken
and it is absolutely perfect
and made in the Instant Pot soyou you know that this dinner
is going to be quick and easy.
It's all about thispanko breadcrumb topping
that it starts with
because that's going to giveyou that perfect texture.
This recipe uses chicken leg quarters.
Those are super inexpensiveand full of flavor.
So you're starting the dish off right.
You wanna get those super crispy.
That's creating a flavorbase at the bottom
and gonna give you goodtexture at the end.
This dish has so much flavorthrough the bacon and sausage.
It uses dried beans which isperfect in the Instant Pot.
That's one of the great benefitsof using the Instant Pot.
You can start with dried beansthat you don't have to soak

The sauce is prepared all in a blender.
You're just gonna combine everything
and it's a lot of ingredients
but trust me, it allworks so well together.
You're gonna wanna drinkthis sauce at the end.
I also love this dishbecause it's made again
with that expensive bone-in chicken thigh.
The dark meat is whereall the flavor's at.
You want to sear this chicken.
Get the skin good and crispy.
This is gonna create a flavorbase for the whole dish
but this is truly one pot cooking.
Throw it all in there.
Dump the sauce in.
This is gonna cook inless than half an hour.
When the chicken's cooked,
you can put it on a sheettray and broil it in the oven
if you want some extra richness to the top
but don't feel like you have to.
You just wanna serve this withrice, beans, a lot of sauce
and then top it with somecilantro and some fresh lime juice
and this is just the perfectdinner for your family.
We're breaking out the sheetpan for this next dinner.
It is sheet pan chicken
with roasted potatoes and broccolini.
This is perfect for the wholefamily and on a weeknight.
The potatoes get going
while you prepare thewhole rest of the meal.
It starts with a flavorful sauce.
You're gonna wanna at least double
if not triple this recipe.
Fresh herbs, honey, mustard.
It's perfect not just for the chicken

This starts with a basic cream sauce
and then you're going toadd a lot of Swiss cheese

This dish is fairly low in carbs
and possibly keto friendlyif you leave the topping off.
The best parts about thisrecipe are the shortcuts
taking by using precookedrotisserie chicken and deli ham.
Just toss the sauce right over that
and pour it into a casserole dish.
The possibilities are endless here.
For some great added textureand a not so low carb option,
you've got to make this panko topping.
It really combines perfectlywith that creamy rich chicken.
You can serve this dish over rice,
serve it on crusty bread orserve it as is with a salad.
It is the perfect meal.

This is another great use
for rotisserie or leftover chicken.
What I love about this dishis it can be a meal by itself
when it's paired with asalad or a green vegetable
but it also makes fora great party appetizer
and goes great with aclassical white wine.

and jarred Alfredo saucebut they can be woken up
with some fresh aromaticslike the shallots.
And who doesn't love puff pastry?
It's buttery, it's rich anda little bit goes a long way.
One sheet is gonna getus several turnovers
so it's just easy.
Use an egg wash to seal up the turnovers
and then we're just going to bake them.
This part can actuallybe done ahead of time
if you wanna make these for a party.

Well, this is a version of the classic
that's perfect for aweeknight because sheet pan.
Even the sauce is made on the sheet pan.
This is really a clean dinner.
It uses fresh ingredientslike these beautiful tomatoes,
garlic, olive oil and then that is roasted
at the same time as the chicken is cooked.
You're going to prepare a simple breading
and then just add it to the hot sheet pan
while the tomatoes are roasting.
You can cook pasta off to the side
but of course if you're low carb,
you can leave that stuff out.
While the chicken finishes,
we just throw all of thatgood tomatoey goodness
into a food processor and itmakes this delicious sauce.
Again, this is a greatrecipe to double or triple
and serve it on a lot of things
like fish, pork or just plain pasta.
This next recipe, easy Brunswick stew
is what freezers andpantries are made for.
This is one of the bestthings to use leftover chicken
or pork that you mighthave stuck in the freezer.
Add that with otherfreezer and pantry staples
and you've got the perfectmeal at the end of the day.
Of course, I love thatit can all be started
in the Crock-Pot, dump, dump, stir
and you come home from work
and you've got the mostcomforting bowl of soup.

bacon-wrapped chicken.
This dish is perfect for entertaining.
It starts with the mostdelicious spice blend
that you will just simplyseason chicken breasts for
and this is a way to elevatea basic chicken breast
especially if you'refeeding a large crowd.
The bacon here isn't just for flavor.
It's gonna keep the chicken moist
by adding a layer of richfat to this lean meat.
After you wrap the chicken,

fish sauce even is going to give you
a flavor explosion in your mouth.
This dish is the perfectbalance of sweet and savory
and a little bit spicy and I just love it.
Top it with some fresh herbsto brighten it up a little bit
and you've got a bowl of comfort
and did I mention that thissoup was fairly low in carbs?
Ah, number 10, copycatfried chicken from Popeyes.
I just discovered that Popeyes
is my new favorite fried chicken.
We are going old school with this
by starting it with abuttermilk brine so plan ahead
because it needs to brine overnight
then you've just got a classicbreading with flour and egg.
The breading gets kickedup with extra cayenne
and hot sauce because Popeyeschicken is a little bit spicy.
Gets the double dredgeand then into peanut oil
over a fairly low frying temperature.
You wanna make sure thatyour oil is not too hot
so that your inside will cookbefore your outside burns.
You want good chickenthat is hot and crispy.
I love those crunchy bits.
They say imitation is thegreatest form of flattery, right?
That's why we can all get behind
this copycat LonghornParmesan crusted chicken.
This dish is almost anabsolute perfect match.
There's nothing super gourmet here
but damn, it is delicious.
This dish also uses boneless,skinless chicken breast
which are perfect forquick weeknight cooking
and the flavors here betweenthe sauce and the cheese
and the panko goes so well together.
Trust me, kids and adults alike
will all be licking their plates.
We're bringing back theInstant Pot for number 12.
This is Instant Pot chicken wings.
To be honest, I doubtedthis recipe at first
but I'm telling you,they're pretty awesome.
The meat on the chickencooks in three minutes
in the Instant Pot
then you're just gonna pop 'emin the oven for a quick broil
and they will get good and crispy.
Toss them in your favorite wing sauce
and this is the perfect party appetizer.
It's also great for a weeknight meal.

and this Instant Pot butterchicken is no exception.
There are so many flavorsgoing on here like garam masala
that keep this from being another boring
Monday and weeknight dinner
and we all know that Ilove a good one pot meal.

turns out perfectly every time trust me.
I mean, you almost justfeel healthy eating it.
This soup is a take on theGreek lemon chicken soup
that everyone knows and loves.
It gets its richness andcreaminess from those eggs
and that bright lemon juice.
Do not use jarred stuff here.
This is a must for fresh lemon juice.
I also love the additionof fresh spinach and dill.
Again, it just makes you feel so healthy.
This soup is the perfect springtime soup.
Oh, it is so good.
Add a little freshcracked pepper on the top.
It's amazing.

Everything gets made on one sheet pan
and served straight fromthe sheet pan family style.
So it's interactive, it's impressive
and it's absolutely delicious.
It starts with a great flavor base
with that chorizo and chicken.
You wanna render that fat out
to give the rest of the dish some flavor.
This is a lot of in and out,back and forth from the oven
so it's not something you canmake and leave the kitchen.
I love the combination of seafood stock
with chicken stock 'cause itmakes it not so overpowering
in the seafood flavor.
When you add your rice,
you wanna be sure it getsnice and toasted in the oven.
This is gonna keep it fluffy at the end.

Be careful, you're goingto fill up your sheet pan
all the way to the top.
But look at that.
There's so much flavor.
The final step is toadd that fresh shrimp,
peas and mussels.
Give it a few more minutes in the oven
and then call the troops in.
